Apricot Almond Chicken Couscous Salad

Ingredients:
- 1 cup traditional or whole wheat couscous
- 8 oz cooked chicken breast
- 1/3 cup dried apricots, chopped fine
- 1/4 cup black olives, pitted and chopped
- 2 Tbsp olive oil
- 3 Tbsp lemon juice
- 2 Tbsp minced fresh Italian parsley
- 3/4 tsp ground cumin
- 1/4 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 2 oz fat-free feta cheese, crumbled
- 2 Tbsp sliced almonds, toasted
Directions:
Bring 1-1/2 cups of water to a boil in a medium saucepan. Stir in the couscous and remove from heat. Cover and let stand for 5 minutes. Pour the couscous into a large serving bowl and fluff with a fork. Stir in the remaining ingredients except for the cheese and almonds. Add more spices as desired. Let cool to room temperature. Serve with cheese and almonds sprinkled on top.
