Very Berry Muffins

Ingredients:

  •  1 cup wheat germ
  •  1/2 cup wheat flour
  •  1/2 cup all-purpose flour
  •  1/4 cup sugar (or sugar substitute equivalent)
  •  1 Tablespoon baking powder
  •  1 teaspoon ground cinnamon
  •  1 cup skim milk
  •  2 T. vegetable oil
  •  1 T. applesauce
  •  2 egg whites, lightly beaten
  •  1 1/4 cups mix of fresh sliced strawberries, blueberries and blackberries

Directions:

Preheat oven to 400 degrees. Line muffin pan with paper muffin cups. Combine wheat germ, flours, sugar, baking powder and cinnamon in small bowl. In a separate bowl, combine milk, oil, applesauce and egg. Mix with dry ingredients until moistened. Stir in berries.

Fill prepared muffin cups two-thirds full. Bake for 20-25 minutes or until golden brown. Serve warm or cool to room temperature. You can freeze any leftovers by storing in a tightly sealed container. To reheat, microwave on high for 30 seconds per muffin.
