Watermelon, Tomato and Mozzarella Salad

Ingredients:
- 1/4 large watermelon
- 2 heirloom tomatoes (any color)
- 4 oz mozzarella pearls or mini balls
- 2 Tbsp lime juice
- 1 Tbsp olive oil
- 1 Tbsp white balsamic vinegar
- Fresh basil to taste, cut in thin strips or chiffon
Directions:
Slice watermelon and tomatoes in thick slices and place on a plate. Arrange mozzarella pearls or balls on top of the watermelon and tomatoes. In a small bowl, whisk together lime juice, olive oil, and white balsamic vinegar. Drizzle over watermelon, tomatoes, and mozzarella. Sprinkle fresh basil on top. TIP: Add some crusty whole grain bread to the side for a complete meal. Enjoy!
