Chef Joe Russo, who lost 20 pounds on Retrofit's innovative weight loss program, demonstrates how to make Healthy Shrimp & Broccoli Pasta. It's one of over 400 dishes tailored for slow, steady weight loss that are featured in the Retrofit Recipe Book.

Debbie: And we will be doing another craft coming up in just a few minutes, but we still have a lot to come, including a healthy recipe for shrimp and broccoli penne pasta.

David: And they are all the rage ... we are in the kitchen with Chef Joe. Today we're making healthy shrimp and broccoli penne pasta.

Chef Joe: We are.

David: Now, healthy shrimp, broccoli penne pasta. We were just talking that eating this kind of food you lost a ton of weight, right?

Chef Joe: Yeah, 20 pounds on Retrofit.

David: Retrofit, what is Retrofit?

Debbie: Retrofit, yeah.

Chef Joe: I work at Vista Staffing Solutions. We do physician locum tenens temporary staffing for hospitals and clinics, and Retrofit came in and surprised us on January 2nd . Our whole company won about 100 of these programs. It's a great program. It includes through Skype we have a dietitian, coach, exercise coach, and behavior coach, and they talk to us through Skype and kind of get us on the right track.

David: A steady diet of mashed potatoes and T-bone steaks, right?

Chef Joe: Unfortunately it's not. So I changed a lot of things. Everything is on RetrofitMe.com, and I kind of went through there ...

Debbie: RetrofitMe.com. That's the website?

Chef Joe: That is, yeah.

Debbie: Okay. Well, let's get busy here.

David: I'm going there right after we get done here. Trust me.

Chef Joe: Okay. These are really simple recipes. They send you a great book of all kinds of recipes with good calorie and good portion size.

David: Okay.

Chef Joe: We're going to start off with some whole grain wheat pasta, get that boiling, and when that's done, voila, there's our pasta. I'm going to switch these.

Debbie: You know what's amazing about whole wheat pasta is it actually tastes good nowadays.

Chef Joe: It does.

Debbie: You know they've come a long way with that.

Chef Joe: Yeah, definitely. The next thing we're going to do is we're going to put some broccoli in here.

Debbie: Wait, no oil? What is going on? Do we put oil?

Chef Joe: It's coming up. It's coming. Oh, you know I wouldn't cook without olive oil.

Debbie: Okay. I'm like, Joe you are healthy.

Chef Joe: You know, olive oil it's a good thing. I can't cook without it.

Debbie: Okay.

Chef Joe: We have some broccoli. We put in there some roasted red pepper flakes and get this going here.

David: Okay.

Chef Joe: We're also going to add some precooked, about 12 of them, medium-sized shrimp.

Debbie: Okay, precooked and medium. Shrimp can be tough to work with.

Chef Joe: Yeah, yeah. For this recipe it's easy. It's precooked. It saves you time, and then you're not going to burn your shrimp or burn your broccoli while you're waiting for shrimp ...

Debbie: Or the garlic.

Chef Joe: ... or the garlic, or anything like that.

David: Where's the best place to buy seafood in Salt Lake, seriously.

Chef Joe: You know, it used to be you wouldn't want to get seafood in Salt Lake because it's so far away. Most big grocery stores they have fish flown in every day.

Debbie: Oh.

David: Yeah.

Chef Joe: Literally, you know ...

Debbie: Just somewhere reputable.

Chef Joe: Yeah, anywhere reputable. They usually have them come in through the airplanes so you get fresh food all the time.

David: Rock on, cool. Stir that up, cook that up really nice.

Chef Joe: Yep, and we'll add some tomatoes.

David: Okay.

Debbie: Now can you use canned?

Chef Joe: I guess.

Debbie: I mean, I know ... well, wait a second ...

David: You can. You can, but you can taste it, right? You know.

Chef Joe: I know. Why not?

David: You can taste the metal.

Chef Joe: It's getting there. You can.

Debbie: But this time of year tomatoes aren't that great anyway.

Chef Joe: I just got these yesterday. Look at these.

Debbie: You did?

Chef Joe: These are great, fresh tomatoes. They're healthy.

Debbie: Okay...

David: Do you like a farmer's market to get this stuff?

Chef Joe: I love farmer's markets, a garden. Anywhere you can get any kind of fresh vegetables is the best way to go.

David: Right.

Debbie: He has chickens.

David: You have chickens?

Chef Joe: I do.

David: I'm thinking about getting chickens.

Chef Joe: I love the chickens.

David: I'm thinking about it.

Chef Joe: You should do that. This is, again, one of the many recipes that's in the recipe book that they have. Retrofit has a ton of great quality stuff.

David: Okay.

Chef Joe: Part of my problem before was the portion control. I've always had something with that where my portions were obviously a little bigger than they should have been.

Debbie: But that's a lot of our problem. I mean, you can eat healthy food until the sun comes up, but if you're eating 4,000 calories a day, you're probably not going to lose weight.

Chef Joe: Yeah, that's kind of what happened with me. So anyhow.

David: I feel your pain, dude. I feel it.

Chef Joe: This is for one person. It's 400 calories.

Debbie: Oh, that looks like a lot.

David: That seems like a ton.

Chef Joe: It is, but if you're used to going out and eating large, huge plate of whatever food, it could still be bad.

David: Mashed potatoes and T-bones, right?

Chef Joe: Exactly. This is a great portion. It's a good-sized meal. Again, we want to cook this for about five minutes and put it together with the pasta in a couple minutes.

Debbie: Okay. We'll come back here and check it out.
